Make your chicken and dumplings as you do now, and just put them into your wide mouthed hot canning jars. Fill the jars to within an inch of the top of the jars. Process pints at 10 pounds pressure for 75 minutes and quarts for 90 pounds pressure unless you live at an altitude over 1,000 feet. Then consult your canning manual for directions in matching your pressure to your altitude, if necessary

Oh boy, I've got to try this! Do you put the chicken and dumplings in the jars raw? Do the dumplings get soggy?

i cook the chicken, in broth, and drop the dumplins in, let cook for about 5 minutes, then put in jars.
make sure you have a great deal of broth in your jars. and I mean alot. good , really good.
I also can up my beef and homemade noodles this same way.

mom, this may sound odd, but I'd love to come stay with you for about a month, just to pick your brain, learn first-hand some of the things you've taught us, and see what "real livin and hard work" is all about! Lady, you are a wealth of knowledge and inspiration!

Well, Liberty, How far do you live from michigan? kidding season is coming up, and yo u could learn all about birthing animals, taking care of the young, and the mama goats. and planting the garden at the same time. going to get real busy , and allot of long dayhs around here . I could teach yo uhow to cook on a wood cookstove, and how to cut wood, can, make jams and jellies, and about that time, i will also have to start on next years soap, laundry and bath.
