View Full Version : Have you ever canned bread?

Once I tried to can some spice bread...the jars sealed but a few weeks later mold started to appear...when I opened the jars they smelled fermented.

Any tips from you seasoned canners?

BTW, I found this recipe at Cooks.com (http://www.cooks.com/): (thought I might try it...I've got pumpkin out the wazoo! :D )

CANNED PUMPKIN BREAD II



2/3 c. shortening
2 2/3 c. sugar
4 eggs
2 c. plain pumpkin
2/3 c. water
3 1/3 c. all-purpose flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. ground cloves
2/3 c. nuts (optional)
8 or 9 wide mouth pint canning jars with lids and rings

Cream shortening and sugar. Beat in eggs, pumpkin and water. Sift together dry ingredients (except nuts) and gradually add to pumpkin mixture. Stir in nuts.
Pour into greased jars, filling each only half full of batter. Clean sealing edge of jars. Bake at 325 degrees for about 45 minutes or until toothpick inserted in center comes out clean. Scald lids and keep in water until used.

When bread is done, remove jars, clean sealing edge again, place lids on jars and screw rings on firmly. As bread cools, jars will seal. Any jars not sealing may not be stored in freezer.

buttercup I have a perfect receipe for canning bread...mine have been in the basement for months and they are still good...give me a bit and will post it here....

I have meat pies on the go and apple pies and pork pies and I am just learning how to can meats...breads where my first challange and they worked out..

I will post the apple one, I have tried rhubarb and banana and strawberry...banana ands apple look like they will fair the best for long term...

rhubarb shrunk probably because of the cid content

here is receipe


2/3 cup of shortening
2 2/3 cups sugar
4 eggs
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 teaspoons salt
2 teaspoons baking soda
3 cups flour
2/3 cup flour
3 cups grated apples or 2 cups apple sauce

preheat oven to 325, lightly grease inside of 8 pint sized jars

sift flour,baking soda,nutneg and cinnamon

cream shortening and sugar till fluffy, add eggs and beat well

add flour alternatly with water and apples and mix ubtil smooth

Fill jars half full with batter,keep clean,bake 325 for 45 minutes

sterilize rings and lids

remove jars one at a time wipe rims of jars and put ona lid and ring,jars will seal as cake cools...

tell me how you do with this one, I made these in 407 and they are still fresh....

you can add mushed banana in place of apples, they work also...don,t do rhubarb(lol)

oh oh oh...can I have the choclate cake receipe.....man I,ll be jarring till the cows come home, and we don,t have any up here so thats a long time for canning :lol:

just make up your favorite chocolate cake receipt, [or do like my girl friend and use a mix], and follow the directions above for the breads. I can all of it up, because my hubby takes it with him driving truck.

Thank you ladies...I'm going to try that recipe kelee877...I should be able to substitute pumpkin for the apples don't ya think?

Oh and chocolate cake too!!! We'll be prepped in style!

I know it will be great...i had thought about that while hubby was reading pressure canner book(and standing in my way)..lol...how greta it will be that we have all of these extra,s....because we have not buried our head in the sand...


momof23...I have lots of cake mixs...will be great to rotate them..use them for the canned cake

I would cook the pumpkin first and if you have left overs freeze it...

while I am on tis topic, I use a jelly in my pies you use 2 cups water 2 cups sugar(less if you want) 2 tablespoons corn starch boil water and sugar and add corn starch as it boiling, stir so it does not burn...and until thickened...this stuff is awesome in pies with a pie crust and crumble on top...
now the reason i am suggesting this is I frroze apples in this sauce, and I have just used them in the pies and they are great...so if you do some of the pumkin in cubes(like apple slices) you can make this type of pie or freeze your pumkin like this and have it ready made for a pie...

yes, yo ucan, I have done it, you can use pumpkin instead of apples.

if you are going to use pumpkin in this bread, mash it up. and use 2 cups of pumpkin, and 1/2 to one teasoon, of pumpkin pie spices.

OK...I made the canned pumpkin cakes...made six pints and used the rest for muffins (so we could give them a try :wink: ) They are great!!

The kids are eating a hot muffin right now! :D

I cooked the pumpkin then pureed it. And yes I did use pumpkin pie spices...when I started canning all this pumpkin last fall, I bought all the necessary spices for making lots of pumpkin pies.

I can already hear the wonderful sound of cans sealing in the kitchen!

woohoo buttercup...I will have to give that try also..no pumkins up in this here part of the woods at this time of the year...wonder if anyone would notice if I used the canned pumkin...and if I bought a can I would get lots

I wouldn't think anybody would notice if you used canned pumpkin...when I make the apple version I'll probably use canned apples...all our orchards around here froze this past spring :cry:

(Now, I wonder if I could can coconut cake...one of my favorites...O the possibilities if this works out for me.)

Wow, great thread! Thanks ladies, I never would have thought of canning bread or cake. I've got soooo many cake mixes from when they were on sale through the holidays.Next day off, I'm trying this!

post back tell us how you did..

I have pulled a ton of pork and beef roasts...momof23goats was so helpful in getting me started on the canning of meats...

and I will work on the cakes and breads next week.....

ok, gals, yo u can use that recipe, and can any kind of quick bread ,i make my hubby lemon poppy seed, he loves it. and banana. and i can them up, and he takes them in his truck, He loves, having quick breads for breakfast, but I do have some apple, that I made using dried apples, I have a couple of jars left from last year. He loves it. remember, to fill not quite half full, because it fill rise up to high. been there done that. oh yeah,Not good. then I was trying to cut it down, and get the lids on so they would seal. so now I watch.
I have only canned chocolate cake, but if you think about it, cake is very similar to quick breads, I think that is why it works so well.
TO get them out, I run a butter [or case knife], around the out side of the jar, tun over, and slap and the bread falls onto the plate for slicing, i also spray the inside of my jars. works good. with joy, or Pam. some thing like that.
I know it keeps a year, but i don't have a clue as to how much longer than that. but for christmas last year, I sent these in a box, with home made syrups, and cookies, and a ham, from the homestead, to each brother and family, and tuins of candies. they all loved it. [/b]

good morning(and I mean morning) gheeze 3.30 and I was wide awake...its now 4.30 and I am in forum all alone :? ...oh well maybe I am all excited about geting more meats canned...and if I have to I pull a nap in this afternoon.... :roll:

We can certainly use a taste tester..

Now my DD who,s 9 is up and awake..first thing she says to me when she comes down stiars...you readin gup on the bird flu and things so we will be ok mommy...awe at times she can be so sweet....
