I'm in the process of canning butter right now and it doesn't seem to want to simmer.

I have it in a stainless mixing bowl over a pan of boiling water. The butter is just sitting there not moving....with a layer of foam over it.

Shouldn't it be bubbling?

Well I'm no help in this one either, but let us know what happens. Some of us are out here waiting to see what happens with yall doing it first before we try it! 8)

Aaaaahhhgg! I waited for almost an hour for it to boil...after several attempts at raising the water level to get the heat closer to the butter...I finally just put the bowl directly on the burner.

It came to a boil really quick then.

I was also kinda concerned because after they "popped" I shook the first one and it "popped" back out and then back in...same with the others. I'm assuming that's normal. :?:

Now I have 8 cans of butter cooling...I'll let you all know how they turn out.

Thanks!

Hallelujah!!!...(this is where the angelic music starts playing and a beam of golden light falls gently on my perfectly canned butter)...it worked!!! It kinda caught me off guard, cause one minute it's all still liquid and I'm wondering if it's gonna work...the next time I go to shake it...voila...it's done!...and it looks so pretty.

WOW, glad it is done. I just found this. usually I just keep turning the jars gently, while they cool, then set in fridge, and then shake gently a couple of more times, then take it out. after it is cooled, and put away. i am go glad it turned out. :D :D :D :D

CONGRATS ON YOUR BUTTER!!!

i was real nervous the first time i canned butter, but once i got the hang of it i was canning it like crazy and hitting every sale to stock up. someone once described them as 'little jars of sunshine'--i thought that was a very fitting description!

ive made garlic butter too, but that i pressure cooked, hmmmmm, is that good stuff to have on hand.

And they just look so pretty all lined up...with their various colors. :P And as jazzy said, the butter does look like sunshine.

I'll be canning more today. My sons helped me with it yesterday. I'm glad they're learning.

(Oh and my kids kept asking me yesterday when I'd be making more of that pumpkin bread...thet loved it and think it's pretty cool that we have it in our preps now...they were also thinking of other things they'd like us to can.)

 Hope your kidlets feel better soon, kelee877.

Maybe you'll still be able to get some things done...we're getting close to midnight it would seem.

Best wishes and speedy recovery to the young ones. Sick kids make me cry...never could work ped's.

Funny about the midnight....we are getting the same feeling around here.

I can't find butter any cheaper than 2.50/lb around here. If I find a deal on it, I'll get some and do the canning. I know the USDA does NOT recommend home canning of butter, but it's been done for years, so I am going to give it a go. It's one of the few things I have never canned before.

Holy cow Kelee. What part of the country are you in? I can buy organic for less than that!

Kelee, aren't you in Canada? WOW, your price on butter is high.
HON, I think I would think about a couple of milk goats, and make my own butter, oh wait, I do, I have goats. :D  that is alot for sure. I went to the store today, and bought powdered milk. why? because all of my gals are preggers. and dry at the moment. so, i am using powdered milk, and canned milk, but I got enough today, to last for a while. like a long while. i will put it in the freezer. I also got alot of cereal, non sweetened. for 2$ a box, with dried strawberries, blueberries, and red raspberries.in it. the lady asked me if i liked cereal, i said sure so do the kids.
well, since, my hair is gray, boy did she look at me.
well, my goat kids like it, my pom kids like it, and my hubby kid likes it, and I am pretty sure my grown kids like it. :D :P
