When you are canning vegetables do you par cook them first? If not,
are the vegetables cooked by the canner or bath canner? If you are canning tougher cuts of meat like a shoulder pot roast, do you cook it
first until the meat is real tender? Last question, does the meat or veg.
once canned, taste like frozen? I just canned shoulder pot roast with potato and celery and onions. Cooked it first till the meat was tender then added potato, celery and onions. The veg. were way too soft once canned. This is my first time canning.

once canned, taste like frozen? I just canned shoulder pot roast with potato and celery and onions. Cooked it first till the meat was tender then added potato, celery and onions. The veg. were way too soft once canned. This is my first time canning.
1. When I am canning my veggies, I use the raw pack method (meaning you don't cook them first). Since you are canning them in hot steam, boiling water bath...it will cook the veggies/fruits enough to be done.
2. When I can the tough meats, I cook them first until they are almost done. Then when they are pressure canning, that pressure finishes the cooking process and softens up most all meats.
3. When I can combo items like stew that has the meat and veggies in it...I cook the meat until it's done in large chunks. Then I do the veggies. If they are fresh I will cook them half done then add the meat and can it up. If they are canned veggies, I just heat them to boiling, add the meat and then can it up. I haven't had any of the veggies come out soft or mushy that way.
4. Taste like frozen? Not sure what ya meant, but it tastes good! And it's so nice to just pop the top on a jar of home canned food and just heat and eat. You can do chili and stuff too. Just about anything you buy in the store canned, you will be able to can it at home. :D

yes, what she said, she is telling you true. for sure.
you can can u pchili, soups, noodles and meats, anything. and it is wonderful to just pop a lid off heat and have a wonderful meal.
