What else can I do with beans?
I make and can soup, salsa, refried, and bean dip.
What else can I do with them?

i like to make pea patties and fry them up like hamburgers, they are very good.
take the cooked beans, mash them up, add chopped onions, celery, bread crumbs or crackers, one or 2 eggs, salt, pepper, mix very well just like you are making meat loaf. then make hamburger sized patties and fry them up , you can also make little meat loaves out of that. i like adding some Janes Crazy Salt to the pea patties as it makes it taste just like breakfast sausage.
give that a try and see if you like it.

CHILI!! There is nothing like a big hot bowl of chili with lots of beans in it on a cold day! :D

AzProtector, I never thought of canning refried beans...I'll definitely need to do that.
Have you ever made cold bean salad?...made with onion and celery?

The cold bean salad is really good on a hot day in the summer.
Baked beans aren't on your list.

AZ-----I use beans to make cake. Usually a chocolate cake using pureed pinto, but make a really rich chocolate torte using black beans. They make the cake really moist like zucchini make a cake moist. my recipes are from a book called, "Desserts with a Difference." you can make all kinds of desserts using vegetables instead of fruit. Pretty scary until you try them.

you can grind them up, and use as flour in gravy, for added protein, or any dish really, add to burgers, any thing.

Momof23goats post just reminded me that I buy bean flour to use in the baking -- our stuff has to be gluten-free, but it would work with regular wheat flour, too. The bean flour adds protein to foods, and can be added to just about anything. Some have a stronger flavor than others, so you'd want to experiment a little -- and don't taste the raw dough!! Raw dry beans taste nasty, but cooked they are fine!

Ooh...forgot about cold bean salad....I love that...haven't made it in years.
Baked beans...for some reason I'm the only one who likes them, so I don't make them all that often.

Amazing what one can do if need be. Iv'e always been amazed at southern cooks resourcefullnes. Speaking of that-----one of my favorite recipes is cantalope pie. It was invented by a black chef on the Katy Railroad back during the Depression. The passengers loved it and it's become rather famous. It was hard to get fruit on a train, but almost every town in Texas shipped about eleven rail cars of watermelon and cantalope a week on the trains and so necessity was the mother of invention.
Basically it's a vanilla cream pie, with about a cup of cooked pureed cantalope added and poured into a baked pie shell. Topped with whipped cream or meringue.
A depression era version of "stone soup." me thinks LOL

My mouth is watering now.
I have a feeling alot of new foods were created in the Depression...I've heard fried cornbread came out of that era...I guess when resources are limited you use what you have.
Speaking of beans...how about black beans and rice...or...pintos w/chorizo sausage?

well, hoe cakes came from the civil war time I think. hoe cakes are very close to fried corn bread. well, come to think of it, hoe cakes were made by the settlers, also.
and every family has its own recipe, from just corn meal and water, mixed and put on a clean hoe, and put into a fire, to ones made with some baking soda, or baking powder or combo there of, and milk mixed in and cooked in a frying pan, or on a flat hot rock.

That made me think of something mom...for those of you who don't usually cook dried beans....always remember to cook them through BEFORE adding any tomato products to them. The tomato will stop them from softening up if you add them before that and you will have beans that are too tough to chew. :wink:

that is sooooooo true. just one of those things of nature. You know , i might just make some beans tomorrow, and a loaf of nice bread, maybe with graham flour in it.
sounds good, and beans cooked with ham is really good. guess I will put some on to soak.

I always soak beans overnight, or first thing in the morning for dinner, and discard the water. Helps with the gaseous effect! I use a pressure cooker and it saves time and fuel or electricity.
I use a lot of garbanzos - fry 'em up with spices, mash and make a sandwich filling, hummous with a bit of lemon juice and tahini (and DH likes lots of garlic). I love pintos - either refried or a simple soup of mashed pintos - mash with the cooking water - and a bit of green onion, salt, pepper and butter, and some chilis of one kind or another.
I like to sprout lentils - just barely - and sautee with a few diced veges like celery and bell pepper. Or make lentil loaf - lentils cooked until tender but not falling apart, and drain (use the cooking water for something) and add some or all of any of the following - torn up bread, bread crumbs, some mashed potatoes or instant dried mashed potatoes, sauteed onion, celery, peppers, and spices (pultry seasoning is nice, or Italian type herbs), some oil or melted butter - then pack into a greased loaf pan, put a little tomato sauce on the top and bake. When cool it's easy to cut into slices and good for sandwiches. Or eat with mashed potatoes and gravy. Or fry it up before baking and make lentilburgers!

I mash leftover beans and add to bread recipes, just adjust your wet and dry ingredients accordingly.

I never soak beans any more before cooking. I just throw them in the pressure cooker. I found that pressure cooking totally gets rid of the gaseous properties of beans.
