I would like to add one that I found to be interesting. The Nolls are teachers. Their site is great for beginners as almost all the recipes have step by step pictures to help people learn how to can. I am not sure as to how I post a link here but I will try.

Momof23goats, I was just getting ready to print out the pdf file you referenced above when I noticed that they indicate the boiling point of water (at sea level) is 220 deg. F! I thought it might be a typo, but that figure is mentioned twice....

I'm not sure what to make of that - not only that they didn't know the correct temperature, but that a proof-reader didn't catch it (they teach that in elementary school, don't they???)

Makes me wonder what other errors might be lurking therein. I didn't see any other problems with a cursory scan of the document, but then I'm not nearly as experienced as many here. Anyone else see any other problems?

Hi TOL-ies,

This is my first post ever (on any message board), so if i'm not doing something right, please call me on it.

i'm wondering if any of you can shed some light on advantages (if there any) to canning with a pressure cooker. my mom taught me how to can by way of water bathing the jars after filling. many of the recipeis i see give instructions using a pressure cooker.

any advise would be very much appreciated.

These are commerical canning lids made Ball they don't have a logo on the lid. The gum area is wider AND thicker. These are the lids that the Amish and Mennonite use.

This site has a wealth of information including how to make cottage cheese, yogurt, "Missouri Mix" which is a Bisquik type mix. It also has recipes.
I clicked on publications, then Human Environmental Services, then Food, Nutrition and Fitness. Most appear to be free, there are a few that charge a small fee (recipes for feeding a crowd).
Under Agriculture the topics range from animal husbandry to gardening. The gardening is broken down for flowers and houseplants, fruits and vegetables.
I appreciate how willing everyone has been to share information.
Also, abebooks.com had several books on canning and food preservation today. I ordered one.:-D

I know absolutely nothing about canning so maybe someone here can help . Why do I see different kinds of canning pots , pressure and regular pot ? Are they used for different kinds of canning ? Do you have to have both or will one do all canning ? I guess what im getting at is, if I was to buy a canning pot which one should I buy ? Any other advice for a novice ? Thanks ......

nope can't do it. it must be defrosted, you can raw pack, but not frozen. the best way t ocan up meat is to thaw it out. it is really the only way.

boiling canner only does ertain foods/ pressure is needed for veggies like beans and corn some other things. If you're gonna get serious you'll need both. I"m new to it myself. Others here will have some excellent info.

Ok mom. What about already cooked frozen meat? Can that be defrosted and canned?
Does it need to be heated again?

Well, I just went ahead and did it anyway. Thawed some frozen cooked stew beef - chopped it into smaller pieces and added cans of diced tomatoes. Boiled it up for a awhile and then canned it. Almost ready to take it out of the canner.

Thanks to all of you for your advice - my latest batch - yesterday - canned ground beef - came out perfectly. Clean and with no failed seals.
