I was recently asked by a client if it was okay to record a conversation between themselves and another person whom they said were treating them terribly in closed door meetings. I pointed them to this site.

You can look it up by state.

If it is a conversation over an electronic device, Federal FCC laws may come into play and also if it is between two states - usually the more restrictive state law will prevail.

If the person you are referring to thinks the other person is going to threaten her and wants evidence in case of legal proceedings ... I don't see any problem.

Well, that depends on the state you live in and how it is used.
Even with our eyes looking at something as perceived as righteous and just - another can turn into a devious mis-use of a privilege and therefore we have a myriad of laws and interpretations by tort and Supreme Court rulings.

It is best to stick with the state precedents and statutes.
