View Full Version : Black Turtle Bean soup--

Take1 1/2 cups of black turtle beans and wash, sort, and cover with water. Bring to a boil and let sit for an hour. (I suspect you can soak overnight and speed this process up a bunch; just dump the water and rinse; it gets rid of alot of the gassy stuff) While you are waiting, dump into a crockpot (or dutch oven) one 32 OZ box of broth (or the equivalent in boulion and water, etc), one big onion, as many garlic cloves as you can stand, three diced potatos, four carrots, and a green pepper. I put and couple of handfuls of pearled barley in there, too. Put on low heat.

After bans soak an hour, dump out the boiling water and rinse until they run clear. The put into the pot with enough water to cover. Cook on high a bit until it boils, then switch to low and simmer.

When getting close to done, check the seasoning. Need more salt, or pepper? A tablespoon of brown sugar brings out the taste, too. Add a few tablespoons of instant mashed potato flakes if you like a thicker broth, or some cornstarch and a bit of water.

Makes a big ole' crock por or dutch oven full, serve with muffins or corn bread, or????

Looks good Limner. Question for you....the black turtle beans here seem to be more expensive than some of the other varieties. Are they there also? Are they "better" tasting than some of the others (or higher protein)?

I really don't know about the protein. But I know Hubby ate them and went back for seconds and only complained about carrots (he HATES carrots....but eats what I put in front of him, LOL!) I got a decent deal on the beans at the Tent Sale, 25 lbs for $20.00. They are a small bean, a bit smaller than a navy bean, so they cook a bit faster than some. I think they taste very good. Maybe it would be worth it to get a small bag and just try them before you buy a big bag?

The only time I have ever seen them here has been in a 5-6 gallon bucket. I'll have to look at some of the stores like Whole Foods and see if I can find a smaller amount to try.

your soup sounds good, but I never heard of putting potatoes, and garlic and carrots in bean soup, until i came north .got to be a yankee thing.

Sounds yummy, but if my husband saw a carrot in it, he wouldn't touch it. I love every veggies even fried Okra. He said he wouldn't eat that either until I made it fresh for him (Yep, we are yankees). Then he gobbled them right down. The only way he will eat carrots is raw or mashed into mashed potatoes. (My grandpa used to mash turnip into mine too because I loved them that way so much). Hubby is a no go on turnip too. Oh, my I could live on it. This is making me very hungry for some veggies of my OWN. LOL Thanks Limner. AL
