View Full Version : Tater Tot Casserole

Be warned - there are as many variations of this as there are people, I think. Here's mine:

(remember I cook for 11 people - you might want to halve it)

2 pounds ground meat
onions to taste (I use 2 large)
2 cans (pints) soup or sauce
milk (in a quantity half the amount of the sauce/soup)
2 cans (or one quart) whole kernel corn
shredded cheese (about 2 cups but this is optional)
salt and pepper to taste
tater tots

What I normally do is brown the meat and onions until crunchy - well done. Salt and pepper to taste. In a bowl, mix a pint of my homemade cheese sauce (posted under the unique canning recipes thread), and a cup of milk with the cream shaken back in. Put the meat in a large cake pan - guessing 11x17. Pour the cheese sauce mix over the top. Layer the corn, then most of the shredded cheese if you want to to use any. Layer the tater tots on top and bake at whatever temperature you want until the tots are brown and crispy.

Variations:

meat - any ground meat will work. We have beef cows, so that is what I use

Sauce/soup - cream of mushroom, cream of celery, cheddar cheese soup, cheese sauce, etc.

Corn - can be fresh, canned, or frozen and you can also use peas, green beans or whatever.

Taters - I use tater tots because that is what my family likes, but I have also used diced potatos and sliced potatoes, and rehydrated hash browns

Cheese - I usually use cheddar, or homemade mozzarella, but you can use whatever you like or leave it out altogether.

sometimes I add green chilis, or some crushed red pepper,too.

Since we are only 3 and 2 of them won't eat leftovers...(they'll learn won't they) I'll definitely 1/2 it.

Will try it out next week. Already have this weeks menu planned.

Your Tater Tot Casserole sure sounds a lot better than the one the Duggar family makes! (What're they up to now--17 kids? 18?)

...and it completely disappeared!! i should have doubled the recipe but didn't figure i'd need to as there were only 4 of us for dinner. i was doing other things when it came out of the oven so i just told hubby and the kids to have at it. when i finally got around to grabbing a plate, i only ended up with a small bowl. :cry: this is surely something i will make again very soon!!

My family loves loves this stuff.....made it last night. We don't add the cheese to it but we use cream of mushroom soup dulited with some milk...but everything else is the same.

They like to have their potatoes on top crisp...This stuff is so good!!!!!

Micah68, my kids love Tator Tot Casserole. We also have a breakfast Tator Tot Casserole recipe...I'll try to find it.

Breakfast Casserole

1 (32 oz) bag tator tots
1/2 c green onions, chopped
salt & pepper to taste
1 lb. cooked sausage or ham
7 eggs, beaten
1 can cream mushroom soup
1/4 c milk
1 can Ro-tel tomatoes
1 1/2 c Velveeta cheese, cubed

Place tots in greased 9 X 13 inch pan; salt and pepper; sprinkle meat on tators; then the cheese; Mix eggs, soup and tomatoes together; pour over cheese; cover; refrigerate overnight; uncover; bake at 350 degrees for 25-35 minutes; reduce heat to 325 degrees and bake for 30 minutes.

We make it without the corn , with ground beef, and Cream of Chicken soup.
Never a leftover problem here!:-D

Thanks Micah68 for the receipe, had it last week and no leftovers and they want to do it again. Used O'brien Potatoes instead of tots, because that's what I had.
Buttercup, that breakfast one sounds excellent. Too bad my bunch won't eat eggs...talk about picky people. Oh well the day is coming.
I raise chickens and get 13 to 14 eggs a day, right now taking them to the city and selling them at my sisters, when I get there my BIL puts out the sign and in 30 minutes the eggs are gone. Buys their feed. But they and the rabbits are my food on the hoof so to speak.

Had to make this for my "boys" (two sons and a husband) two nights in a row. First night made it with a base of chili, cheese, cut up hot dogs and onions with tater tots on top. They liked it so much they asked if we could have it the next night also :D I told my hubby he'd have to grab some tots on the way home and he and the kids said to use the bag of seasoned french fries instead. Did that last night and it was still good but the tots was definitely better. Thanks for the idea!

Buttercup, had to post and tell you Dan mixed up the Breakfast Casserole and OMG was it good, DH said make sure to post and tell whoever shared it how good it is.... he is sending it to his family members that like to cook!

Yummo.. good for Dinner, too. can;t wait to try Micah's
