Banana Nut Bread

3 or 4 ripe bananas

1/3 cup melted butter

1 egg

1 cup sugar

1 tsp vanilla

1 tsp baking soda

pinch of salt

1/2 cup chopped walnuts

1 1/2 cup all purpose flour

Preheat oven at 350 degrees

Mash the bananas (I use a potato masher). Add the butter, egg (whisk it first), sugar, vanilla, baking soda, salt, nuts, flour. (in that order, I also add the flour slowly). Butter a loaf pan, add the mixture and bake for 1 hour.

ooOOHHhhhh, yeah! I spent about a hour 2 weeks ago looking for a good banana nut bread recipe. The only thing I'd add to yours is a 1/4 cup buttermilk I like the way it makes baked goods so tender, mmmm

Its cold here today........winter came back and I am thinking cooking in the kitchen would feel good....warming up the house with fragrant aromas....

You recipe sounds like just the ticket.

For a little variation and added sweetness, add about 1/2 cup of chopped dried apricots to the batter.
