I discovered this on Recipezaar.com yesterday and it is AMAZING!

My only recommendation is to omit the seasoning salt or use no more than 1/2 teaspoon. Also, lowfat mayo works great with this. My family went nuts over this last night. I had a cold piece this afternoon chopped up in my salad and it was super moist and seemed even more flavorful.

I make a similar recipe except instead of mayo I use Hidden Valley Ranch dressing. No salt or pepper added but I do use the parmesan. I also cut it in chunks before coating, then put it in a 9x13 and top with shredded cheddar. We call it "Cheesy Chicken" and it is without a doubt my family's favorite chicken recipe!

Made this a couple of nights ago, excellent! I did cut back on the salt as recommended, and since I pounded out the breasts to about 3/4 inch, my cook time was a little shorter. But very easy to make, tasty and juicy.

I believe the secret to this is the oil. I just smother our chicken with olive oil before baking and it also comes out moist and flavorful. I add salt and pepper, since it is our own chicken, no extra salt was added in the processing and packaging.

Also, since our own chickens (heritage) are low in fat, the chicken does not come out greasy at all.

I hate to cook and I'm not very good at it. It seems like every time I try to bake chicken breasts in the oven they turn out too dry. But a few years ago I found a recipe very similar to the one in the OP and it turns out good every time..never dry. This is a great recipe especially for those who don't enjoy cooking and want something simple and easy, yet tasty.

Paremesan crusted chicken

1/2 cup mayonnaise
1/4 cup grated parmesan cheese
4 boneless chicken breasts
italian seasoned dry bread crumbs

Combine mayo and cheese, spread on chicken, sprinkle with bread crumbs, bake at 425 for 20 minutes. (I sometimes sprinkle a little garlic powder on it)

I've never tried it with low fat mayo. I think there may be healthier versions of this using olive oil instead of mayo. Also this is really good to use on chicken tenders instead of chicken breasts.

ETA: I also wanted to point out that DH hates mayonnaise but he can eat this fine, you really do not taste the mayo after it is cooked..so if you hate the taste of mayonnaise, don't be afraid to try this one. The mayo just keeps it moist and tender.

Yum, also try it with crushed cheese crackers in place of the bread crumbs. There won't be any leftovers. :-) AL

Thank you for the recipe. My family and I had it tonight, only with chicken breasts. Really good! A definite keeper recipe.

Tried this tonight--it turned out good! DH isn't a chicken-breast fan, but he liked it just fine.

I do something similar, only douse the chicken parts in mayo, then roll in a cornmeal and seasoned salt mixture. Oven bake.
