Found this recipe online a few years ago. It is really tasty, especially on buttermilk waffles. It freezes well.

Chokecherry Syrup Recipe
Ingredients
3 c chokecherry juice (see first step) .
1/4 tsp almond extract .
6 1/2 c sugar
Directions
Step #1 Wash chokecherries, barely cover with water & cook, place this In a large-ish kettle, covered, for about 30 mins till the cherries are soft.
Step #2 Mash carefully & strain the chokecherry juice through a sieve or cheesecloth.
Step #3 Pour 3 c juice into a large kettle; stir in the the sugar.
Step #4 Cook on high, stirring constantly.
Step #5 Boil hard for 1 min.
Step #6 Remove from heat & skim foam.
Step #7 Add extract if using (almond extract gives a stronger cherry taste).
Step #8 To can: Pour hot syrup into sterilized hot jars to within 1/8th inch from top.
