What kind of shelf life do these have? I would like to mix these up. :-D

I really don't know. When I mix these I seal them in bags with the vacuum sealer instead of using jars. Usually I make this towards the latter part of September for the following soup season and never have them around for longer than 6 months. I know it's good that far out.

I will say this. When I make the chicken noodle soup mix I use store-bought noodles when storing. The reason is my homemade ones take longer than the 15 minutes to cook. For some reason I can't get my noodles thin enough for recipes like this. I could go ahead and use my noodles, but the reason I keep these mixes around is so my son can fix something for himself if I happen to be away from home. It's just easier for him with the store-bought since he has little cooking patience.

One of my newer favorites is applesauce from dehydrated apples.
This recipe uses dehydrated apples that are reconstituted. It is really easy and yummy. I think it tastes better after it sits in the refrigerator for a few hours. This recipe is adapted from Everydayfoodstorage.com. You could add 3 T red hot candies in place of the cinnamon sugar if you wanted.

2 C dehydrated apples
2 C boiling water
3/4 C craisins (optional)
1/2 t ground cinnamon (optional)
1 t sugar (optional)

Place the dehydrated apple slices and craisins in a blender. Top the fruit with the boiling water. Add in the cinnamon and sugar. Allow to soak for about 5 minutes. Process in your blender to desired consistency.
Refrigerate.
