My daughters were messing around in the kitchen yesterday and tried out some new recipes they had found. We were all shocked at how good they turned out! yes, they use store bought processed foods, but they were cheap, fun, and tasted great. A nice project for a group of children
Peanut Pattie cookies
Take two Big Cheez-it crackers and glue them together with a generous amount of creamy peanut butter. Dip in melted chocolate. (*I actually had to take it apart to see what it was made from, they melt in your mouth and are very good)
Chocolate Mint Pattie Cookies
Mix 1/2 t. peppermint extract with 1 can (16 ounces) of vanilla frosting and 3-5 drops green food coloring if desired.
Use that to glue together round buttery crackers (we used Ritz). Dip in melted chocolate. (these were not quite as good as the peanut butter ones - but still VERY good. )
Peppermint Patty Candies
1 pkg cream cheese (8 ounce)
1 t. peppermint extract
9 cups powdered sugar
3/4 c milk chocolate chips
3/4 c semisweet chocolate chips
3 T shortening
Beat the cream cheese and extract until smooth. Add the sugar gradually, beating well after each addition. Shape into 1 inch balls, place on waxed paper and flatten into patties. Chill for an hour in the fridge or 30 minutes in the freezer
Melt the chips and shortening (we used the microwave). dip the patties in the chocolate and put on waxed paper until set. Store in refrigerator.
These were delicious with a capital D. I am going to make them for the Christmas cookie trays we give out, but only a couple on each because they have to be refrigerated.
We figured out how many cookies you could make and the costs of the ingredients and it was WAY cheaper than buying cookies or peppermint patty candies.
