This is the plastic canvas with little squares you fill in with yarn. I have made Christmas ornaments, little villages, and even boxes out of this. Anyone else do this?

I've not done them with cardboard, but last Yule I got a couple of books with pre-1600 counted designs and I did DH a pouch with a Wolf on it and house-mate a pillow with a Pelican (SCA award) on it. I find it fun and relaxing, though it is not my main skill.

I've only done counted cross stitch.

Yes. I haven't done much since the last two kids have come along. I have a whole Rubbermaid tote full of pattern books. My sister also has a whole tote full. Last count between us, there were only about 10 duplicate books.

I keep thinking that now the kids are older I'll be able to craft more but it seems my days fill up with other stuff.

Yep, I do the plastic canvas too and embrodery and cross stitch and crewel and.....well you get the picture lol. If it's a needle craft, I usually do it or have done it. Right now, I have some garden hangers for the plastic canvas to do. Embrodering pillow cases and a nice linen table cloth in blue and white to match my kitchen. :-D More pillow cases in cross stitch, but that is because most of ours are wearing thin, so new ones are definately needed.
