Okay, I said in another thread I would post this recipe, so here goes:

Marinated Duck Breasts

Duck breast, sliced thin long ways
1 bottle regular style Italian dressing
1 box tooth picks
1 box bacon

Wash breast well and slice into thin strips long ways. Put into bowl or long pan and cover with italian dressing. Mix well so that all pieces of breast are covered with the dressing. Let sit in fridge overnight. Next day take a piece of breast and roll up. Put onto a piece of bacon and roll that up outside the duck breast. Secure together with a toothpick. Once you have all your pieces rolled up, grill them about 5 minutes on the bottom and 5 on the top. Serve with rolls, baked potatoes and salad. Or whatever you care to have with them.

The first time we did these, we just fell in love with them. It tastes just like fillet mingion (sp?) and they just want to melt in your mouth. There is no "gamey" taste to it. I usually do one freezer bag full of breasts, which give us about 50-60 pieces to share with the friends that are always coming over!
