Do you like fried green tomatoes? Wouldn't they taste good right about the end of January? Well here's a little canning recipe that works great for that!
Canned green tomatoes
Slice your tomatoes about 1 to 1/2 inch thick and stack in pint jars. I add a pinch of salt also. Add water to jars, leaving 1 inch head space. Water bath for 25 minutes.
I have some we canned two years ago and they are holding their shape and fry up well. You can't tell them from fresh almost. And they sure do taste good with dinner on a cold winters night! And nope, they dont get soggy like canned squash slices do!
