I have spent a better part of the day working on all the parts of this, but my intention is to have these for lunch all week long. I can tell you that the Chipotle Cream sauce is excellent and that was before it sat for a while.

This sounds so good! Can't wait till the water warms a little and I can get me some catfish to try this on. (preferably flathead)

I love Catfish!! Some of the comments mention that they substitute other fish, which is what I'll be doing.
I was in a store today, that had fresh Halibut. They actually were asking $21.99 a lb. Can you imagine that?!? I am in central New Hampshire.
