First, I put my store bought pie crust into a 9" pie pan and get it ready. (I know, but since the kids are all grown, I take the easy way out)
Peel and slice thin 4 medium regular onions
Mince Two cloves of garlic
Put these into a big fry pan with two good sized chunks of butter and start the saute' until translucent....DO NOT brown them. COOL THESE COMPLETELY
In a big bowl:
Beat two large or xlarge eggs
Two tablespoons of minced parsley (fresh)
Two tablespoons of minced chives (fresh)
Salt and pepper and a pinch of paprika if liked
Add three quarters of a cup of 1/2 and 1/2 cream
Whip it up good by hand
Now add:
Three quarters of a cup of sharp cheddar cheese and stir into mixture
Now you can add all your cooled onions and garlic to the bowl.
Mix well.
Bake in a hot oven 400 degrees (make sure you put a collar around your crust top because it will get too brown).
Cook at 400 about 30 minutes.
Drop heat to 350 degrees and cook another 10 to 15 minutes.
Positively Yummy. Serve hot as a side dish or a whole meal with a side salad. This is also good heated up in the oven if you are lucky enough to get any left over. It tastes just as good the second time around.
