    Default ONION PIE (Savory for a meal)

    First, I put my store bought pie crust into a 9" pie pan and get it ready. (I know, but since the kids are all grown, I take the easy way out)

    Peel and slice thin 4 medium regular onions
    Mince Two cloves of garlic

    Put these into a big fry pan with two good sized chunks of butter and start the saute' until translucent....DO NOT brown them. COOL THESE COMPLETELY

    In a big bowl:

    Beat two large or xlarge eggs
    Two tablespoons of minced parsley (fresh)
    Two tablespoons of minced chives (fresh)
    Salt and pepper and a pinch of paprika if liked
    Add three quarters of a cup of 1/2 and 1/2 cream
    Whip it up good by hand
    Now add:
    Three quarters of a cup of sharp cheddar cheese and stir into mixture

    Now you can add all your cooled onions and garlic to the bowl.
    Mix well.

    Bake in a hot oven 400 degrees (make sure you put a collar around your crust top because it will get too brown).
    Cook at 400 about 30 minutes.
    Drop heat to 350 degrees and cook another 10 to 15 minutes.

    Positively Yummy. Serve hot as a side dish or a whole meal with a side salad. This is also good heated up in the oven if you are lucky enough to get any left over. It tastes just as good the second time around.

    Bab's grandmother's onion pie:

    Mix up a box of jiffy pizza dough mix (or your favorite pizza dough) and line a pie pan just as you would for a regular pie crust.

    Mix in a bowl:
    Cut the tops off of a bunch of green onions (green part) and snip into 1/2 inch pieces.
    Pour in enough evaporated milk to lightly coat the green onion pieces
    Add 1/4 tsp creme of tartar
    Dash of salt
    Mix until onion pieces are lightly coated and put in the pizza pie crust.

    Bake in 350 degree oven until crust is golden brown.

    It's a nice luncheon dish. I grew up loving it, but it's one of those recipes where you either love it or you don't. Unfortunately, I'm the only one in my family who likes it, so I don't make it very often.

    Thank you so much...I had just recently heard about onion pie and how good it was, but no one shared a recipe. I can't wait to try this.

    Has anyone tried it?? Or is it too hot outside for this now? I am doing the swiss chard recipe quite often too. Hubby loves spinach but it too has gone out of site price wise. I will be happy to see local farmer's coming to a market. It is a bit sad that we don't have much in the way of local farmers selling their beautiful products. One would think, in our area, that there would be at least a weekly one. We have found one place a few miles from here, but they bring things in and I really like supporting locals who are trying to make it pay to farm. I hope that doesn't sound silly. We don't buy a lot as there are only two of us, but it still feels good to know you help support your neighbors. AL
