I just made a bunch of catsup yesterday. Two large batches... one of a traditional type from 1910, one a "Heinz clone" found on the "Topsecretrecipe site"
Except, of course, I had to go and play around with the "clone" recipe, because it called for tomato paste, and- duh- corn syrup!
Here is the original:
one 6-ounce can tomato paste
1/2 cup light corn syrup
1/2 cup white vinegar
1/4 cup water
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
1. Combine all ingredients in a medium saucepan over medium heat. Whisk until smooth.
2. When mixture comes to a boil, reduce heat and simmer for 20 minutes, stirring often.
3. Remove pan from heat and cover until cool. Chill and store in a covered container.
Makes 1 1/2 cups
Here's what I made:
12 quarts tomato puree
9 cups sugar (this is both replacement for the corn syrup and the sugar called for later. It's 2 cups less than they call for... it was plenty sweet for us)
12 cups white vinegar
1/2 cup salt
2 tblsp onion powder
1 tblsp garlic powder
And I added 1 tablespoon cayenne pepper.....
Mix everything in a big kettle (mine holds 20 quarts) and simmer until reduced by half. I stick a yardstick into the mix at the beginning, and then measure until it's half as deep. I was worried about scorching, but it never threatened to at all.
Can in pint jars in a water bath for 10 minutes.
