Cabbage and Noodles
Another old family recipe by general request...
Cabbage and Noodles
1 package of medium or wide egg noodles
1/2 cup water
1 large head cabbage
1/4 lb. Bacon, chopped to 1" squares
1 large white or yellow onion, chopped julienne style
Salt and pepper
Oregano
Cook noodles in water with 2-3 teaspoons salt until al dente. Drain and place in cold water. Cut cabbage so that leaves are in 3/4 - 1" square pieces. Discard small parts of cabbage heart and mainly use outer and middle leaves. Rinse, drain and set aside. In large skillet, sauté onion in olive oil till clear, and remove to side dish. Add bacon squares to skillet and cook until done but not crisp. Remove bacon to side dish, and heat bacon grease till hot. Add cabbage to skillet, and stir to prevent scorching. Add water (or wine) to skillet and reduce heat to medium. Simmer cabbage until tender, but still a little crispy. Add noodles and stir in. Add bacon pieces and season to taste. Cook 4-6 minutes to blend flavors and serve.
this one isn't as much old, as it is just plain good. I suppose since I've been making it for upwards of 20 years, that classifies it as old....
