ANOTHER good recipe for leftover Turkey
Turkey Divan
3 cups cut up leftover turkey
4 cups fresh broccoli, cut up and steamed until just tender (or equivalent frozen, cooked to the the same doneness)
2 cans cream of chicken soup
1 1/2 cups mayonnaise
Juice of a lemon
1 tsp curry powder (or more, if you like curry)
salt and pepper to taste
Grated cheddar or buttered bread crumbs (or combination of both)
In a medium mixing bowl combine soup, mayo, lemon juice, curry powder, salt, and pepper. Whisk until smooth. Taste and adjust seasonings. Drain broccoli and put in a 9x13 deep baking dish. Layer the turkey on top of the broccoli. Pour the sauce over all. Top with the cheese, crumbs or combo of both. Bake at 350 for 30-40 minutes until bubbly and nicely browned on top.
Enjoy!! This is also good with leftover chicken.
