    I've always frozen cheese, never canned it. I'll be interested in seeing responses to your request.

    Canning dairy products, including cheese, is not recommended, per the USDA. Sorry.

    Here is the website I was telling you about last night on the phone *wink* that talks about canning cheese and cream cheese.

    Search canning cheese on this forum for previous threads. We canned mozzarella and mild cheddar in July last year and it did fine. Also canned butter did fine. (stored in dark, cool room) DH says makes a better mac & cheese . Use like regular cheese incl pizza. We'll can some more this year to keep shelf stocked. As mentioned not USDA approved but in my book experience counts too and there's experienced canning people here on the TOL that I'm learning from.

    Default Thank you for this link, *just living* !!

    Just from reading the cheese article, (and esp. the comments section), this looks like a VERY good blog to keep bookmarked !
    BUT, I plan to download;
    As Much As Possible,
    print it out,
    and add it to our 3-ring-binder-collection of unique & likely soon to be unavailable sources of exceptionally valuable information.
    (Sorry for the hyperbole, but folks that publish REAL experience, outside the box info, are few and far between most of the DIY, self sufficient writers.)
