I have not been "on the tree" for long--again--it goes in spurts but I'll spare the gore as to why...anyhow, I called a fellow "tree hugger" Sunday exclaiming my joy at my new easy cookbook and how I'm back in my "prepping groove" if for no other reason that I have four girls that can eat as much as four boys--equality in some things for sure--Anyhow, I spend 10 hours in the kitchen ( I counted) cooking, pre-cooking, cutting, freezing, chopping, dicing and mincing, and already, it IS paying off....I know you all are smiling like, "good deal sister, nice you caught on--ahmm." but, My new found zeal is out of of course, necessity...my goal is to shave $100 off my grocery bill each month and NO EATING OUT when kids whine ( I live in the city where there is food on every corner to be had as "eat out" sooooo, I'm the new food enforcer at our house--three squares a day, no snacks unless they are of my making, approval etc... So, I'm going to share my favorite recipe that turns into two and is maybe under $10 for the batch.
I bought about #4 of pork on sale--soooo, here is recipe:
Peanut/Sesame Pork Over Rice---Which Can Turn Into Tacos:
Adjust per your taste, amount of people in family --we have 6 but I usuallly make for 8
Brown Pork in Pan ( duh...)
Season portk in Pan( double duh duh) with oil of your choice or butter
add your onions, peppers, whatever you like to it....
Throw into crock pot with any kind of BBQ sauce or Marinade you like from store or home-make --On High, about 6 hours---
Slice into strips or bits, OR if you like throw in blender/processor to make more of a "pulled Pork"...
Sprinkle with sesame seeds and then put in crock pot again with some Peanut Butter ( it then tastes like a LeAnn Chin's kinda peanut/porky thing...)
Make up your batch of rice ---
Serve rice with a wallop of the above-mentioned meat dish--You can garnish with green onions, parmasean cheese, sour-cream, whatev....
Okay, I know, worst da-mn directions you ever saw on the tree for cooking but I know you all "get it" cuz you use a pinch and dash here, all the time...
Oh yeah, if the kids are "not liking it" ---put it in a soft taco shell, add some more cheese, and its like a taco--add taco stuff of your choice...That's your left-over meal after the first time around....
