If you have a Sun Oven, throw chicken, onion, bell peppers, etc into a suitable dish and let it cook away. You'll have the basics for chicken fajitas or fajita salad.
Cold Putanesca is good. Fresh or (even canned) diced tomatoes with minced garlic, basil, parsley, black olives, and olive oil. Mix well and refrigerate. The longer it sits, the better it gets. Serve with whatever pasta you like and top with parmesan cheese.
Cold watermelon works as a main dish when it's this hot too.
