Suet is a MUCH harder fat than lard or butter. Not sure how well it would work in baking, to be honest. It does make fabulous deep fried french fries, though

For the "chips" (what we call french fries) in fish and chips to be authentic, they have to be deep fried in beef suet, or beef drippings, as it's called across the pond. The taste is incredible.
