    the longer this relish ages, the hotter it gets.

    1 dozen green peppers, [sweet]
    1 doz. red sweet peppers
    1 doz. apples
    1 pound of sugar
    1 quart of vinegar
    9 hot peppers
    1 table spoon pickling spices
    3 tablespoons of dry mustard
    2 tablespoons of celery seeds.
    Now you can of course, add more hot peppers to this if you want. and it will make it hotter.

    grind the peppers, onions, apples, and drain.
    Co0mbine all the ingredients in a large kettle. and cook, over med, heat. for 30 minutes.
    Pour into hot sterilized jars, and seal.
    usually when recipe like this, says seal, I hot water bath for 10 or 15 minutes, usually 10. the vinegar, will keep this from spoiling, just like sour kraut. the salt and vinegar, acts like a preserving agent. in other words in a brine. is really what relishes, and pickles are in.

    Default bread and butter pickles, --hubbys favorite

    30 cucumbers
    10 med onions
    4 tablespoons of salt
    5 cups of vinegar
    2 teaspoon of celery seeds
    2 teaspoon of ground ginger
    4 cups of sugar
    1 teaspoon of turmeric
    2 teaspoon of white mustard seed. [i use what ever kind i have]
    slice the cucumbers and the onions, and sprinkle with salt. let stand for one hour.
    drain. in a cheese cloth, or a old thin dish towel or old sheet.
    combine the rest of the ingredients in a large kettle, and bring to a boil. add the cucumbers and onions, and bring to the boiling point. simmer for 10 minutes, then pour into sterilized jars. place lids and rings on jars, and process for 10 minutes, at 180 degrees, in hot water bath. canner. [i use a candy thermometer]

    hi, my mom still makes her own pickles every year from her garden. every one that has tried them loves them. i'll go over this weekend and see if she will give me her recipe, then i will post it for you

    BELLE, I posted a bunch of them. go to the top and do a search, that should bring them up. try under dills, or what ever kind you want.
