    Default Freezing vegetables

I want to know which veggies I can dice and freeze raw and which ones I have to blanch first before freezing. I have a lot of turnips, rutabagas, potatoes and butternut squash. Thanks for the advice in advance!

    Blanch ALL of them.

The only vegetables I know that you can freeze without blanching are tomatoes, peppers and onions. Everything else changes a LOT if you don't blanch

Here is a PDF with all the required blanching times, and some of the reasons it's important: http://nchfp.uga.edu/publications/ug...freeze_veg.pdf

Don't ever try to freeze lettuce. The water in it freezes and destroys it. :)
