I've enjoyed looking through your recipes, so here's one of mine.

in the old days, I'd just walk down to the bay less than 1/4 mi from me and harvest some mussels...now I buy them because of pollution.

The whole process should take about 1/2 hr or less.

2 lbs. mussels
1 lb. ground turkey, chicken, or italian style sausage removed from casing.
1/2 bunch kale torn into small pieces or any other green that'll stand up to braising.
1 cup cannellini or other white bean.
2 cups chicken stock. ( or substitute water, vegetable or fish stock..If you cook your own dry beans add some of the liquid)
6-8 plum tomatoes cut into 1/2 inch pieces ( canned or blanched fresh..or equivalent in other variety)
4 cloves garlic, diced ( or to taste)
1 large onion, diced
1/2 cup parsley
1 tsp. oregano
1 tsp basil
1/2 tsp. anise or fennel seed
1/2 tsp black pepper
1/2 tsp red pepper flakes ( or to taste )
pinch salt
olive oil


In a large pot, heat enough oil to cover bottom of pan, medium high, add onion, red pepper flakes, and pinch of salt and cook until soft.
Add garlic, cook until becomes fragrant. Add turkey, oregano, basil, anise, black pepper..cook till browning but not cooked through.. try to have bits that are about 1/2 inch big. Add oil if pot is dry, add kale cook until it begins to wilt, add tomatoes and beans and cook until heated though. Add chicken stock and parsley and bring to a boil. Add mussels, cover and cook 8 or so minutes.
