    Default Wacky Cake

    In pan to be baked in (8x8x2):
    1 1/2 cup flour
    1 cup sugar
    1 teaspoon soda
    3 tablespoon cocoa
    1/2 teaspoon salt
    Mix well then smooth out. Make 2 small wells and one large well with spoon. and add:
    Big well............1/2 cup oil (I use olive oil)
    1st small well....1 teaspoon Vanilla
    2nd small well....1 tablespoon vinegar
    Over all pour 1 cup room temperature water. Stir until smooth. Bake @ 350 for 25-30 minutes. Frost to suit, but moist enough to scarf without frosting. Recipe may be doubled using 9x13x2 pan if larger cake is desired.

    Default Milkless, Eggless, Butterless Cake

    1 cup sugar
    1 cup water
    1 cup raisins
    1/2 cup shortning
    1 teaspoon each:
    nutmeg, cloves and cinnamon
    pinch of salt

    Boil above ingredients for 3 minutes. Cool and beat in the following:
    1 teaspoon soda disabled in 3/4 c. warm water (buttermilk may be substituted for water)
    2 cups flour
    1 teaspoon baking powder
    1/2 cup nuts

    Bake @ 350 for 45 minutes or til tested done. frost to suit. makes 9x13 cake or 22 cupcakes.

    This is a cake recipe my Grandma made during the depression. And quite tasty.

    fluffy white Cake

    3 cups of flour
    2 cups sugar
    4 teaspoon baking powder
    2 eggs
    2 cups cream
    sift dry ingredients. Put eggs and cream together and add to flour mixture. Stir thoroughly.
    Pour into cake pan, and bake at 350 until cone.
    frost with favorite frosting.

    Fudge Cake

    1/2 c butter
    1/2 c applesauce
    1/3 c cocoa powder
    1 C water

    whisk together in saucepan until butter is just melted.

    In separate bowls:

    combine in large bowl.
    2 C flour
    2 C sugar


    whisk together.
    2 eggs
    1/2 C buttermilk (canned milk and a little vinegar works)
    2 tsp vanilla
    1 tsp baking soda
    1 tsp salt



    Add cocoa mixture to flour mixture and mix well. Add wet ingredients and whisk until smooth (batter will be thin). Pour into 9x13 pan. Bake at 375 for 35 minutes. Cool for about 30 minutes before topping.


    Fudge icing: (I don't measure so amounts are just a starting point...fiddle until the consistency is to your liking)

    2 squares bakers chocolate (unsweetened)
    2 tbsp butter
    1/4 c milk
    combine in double boiler until melted. stir until smooth.

    add:
    2 C powdered sugar

    mix until spreading consistency. Spread on warm cake.

    Default Apple cake (to die for)

    Apple cake

    3 cups diced apple
    2 cups sugar
    1 cup oil (peanut, corn or other veg oil)

    3 eggs, beaten
    2 tap vanilla extract

    3 cups sifted AP
    1 tsp baking soda
    1 tsp salt
    (1 tsp freshly grated nutmeg, optional)
    (1 cup chopped walnuts, optional)
    1/2 tsp cinnamon, optional)

    Mix together dry ingredients in a separate bowl. Mix together apples, oil and sugar in a large mixing bowl. Add beaten eggs and vanilla and mix well. Add all dry ingredients (including optionals ingredients) and mix well.

    Pour into a greased 9x13 baking pan. Place in a COLD oven. Turn oven to 325F and bake for 1 hour. Top with icing as directed below.

    Icing

    1/2 cup butter
    1 cup brown sugar
    1/4 cup evaporated milk or half and half

    Bring to a boil and pour over warm apple cake. Prick cake all over with a 2 pronged carving fork to allow icing to drip into cake.

    CHERRY DUMP CAKE
    Dump in a 9 x 13 inch pan, do not mix, in this order:

    1 can cherry pie filling
    1 can crushed pineapple
    1 box yellow cake mix, dry
    2 sticks melted butter
    Sprinkle top with coconut and nuts. Bake at 350 degrees for 1 hour. Serve in pan.

    When I could still eat chocolate, this was my very favorite cake.

    Belle's Chocolate Cake

    1 cup shortening
    1 cup water
    2 cups sugar
    4 oz. unsweetened baking chocolate
    2 cups flour
    2 t. baking soda
    1 t. salt
    2 eggs
    1 cup buttermilk or sour milk

    Grease a 9"x13" baking pan (this cake is too moist and tender to be made in layers). Preheat oven to 350 degrees.

    In large saucepan, measure shortening, water, and unsweetened chocolate. Heat until chocolate is melted. Remove from heat (do not cool) and add sugar. Stir in flour, baking soda, and salt until thoroughly blended. Add eggs and buttermilk or sour milk. Mix well. Mixture will be thin.

    Pour into prepared pan and bake 30 to 40 minutes, or until cakes starts to pull away from the sides of the pan. Do not overbake.

    Cool. Frost, if desired.

    Hawaiian Wedding Cake

    2 cups all purpose flour
    2 cups sugar
    2 eggs
    2 tsp baking powder
    1 cup chopped nuts
    1 cup coconut
    1 20-ounce can crushed pineapple, not drained

    Combine all incredients and mix well with a large spoon. Pour into a well greased bundt pan. Bake at 350 degrees for 40-45 min. Remove from the oven and cool in pan upside down on a cooling rack until the cake falls out.
    Frost with cream cheese frosting.

    Default Friendship Cake

    Friendship Fruit: (process takes 30 days)
    In 1 gal glass jar (at room temp) start mix:
    1/4 c. bourbon or rum and 1 #303 Can diced peaches or fruit cocktail (with juice)
    following batches may be started with 1 1/2 c. of juice from this batch

    STIR WELL DAILY USING A WOODEN SPOON -- NEVER USE A METAL SPOON!

    On 10th dat: Add 2 1/2 c. sugar and 1 #303 can of crushed pineapple.

    Stir daily as before.

    On 20th day: Add 2 1/2 c. sugar and 2 9 oz jars of maraschino cherries without the juice. You may want to cut cherries in half to make it look like lots of cherries.

    Stir daily as before. Remember to maintain at room temp. This makes enough fruit for 3 cakes. All cakes do not need to be baked at once, but they do freeze well.

    On 30th day: Make cake(s) and start another batch using the 1 1/2 c. juice from last batch as starter (like sourdough starter theory)

    Friendship cake:

    1 1/2 c. fruit mix - drained
    2/3 c. oil
    1 sm box instant pudding (any flavor)
    1 yellow cake mix
    1 c. chopped nuts
    1 c. raisins

    Mix ingredients. Batter will be stiff. Pour into greased and floured Bundt Pan or Angel Cake pan. Bake at 350 for 40-60 min.

    Make all 3 cakes and share the cake and the recipe with friend/neighbor.
