If the Purpose of His Law is satisfied/fulfilled, why repeat it?
For example: At His last supper, He said to take wine/grape juice and unleavened as symbols of Him, His Intent and Sacrifice on Earth as a Man, until He Comes.
Since He accomplished that; And because of those who obey Him, He comes and abides with them. So the "until" means it ceases among those who obey Him.
But, remembering His Blood and Flesh is important. And, the passover Lamb sacrifice was/is still symbolic of Him and His accomplishments.
And unleavened bread means without sin. So the symbology is important still.
