    Default Italian Cheese Bread

    (I ALWAYS double the recipe, because my family takes out one pan of this in nothing flat. So if you're feeding more than about 6 people, you probably want to double it!)

    2 1/2 c flour
    1 tsp salt
    1 tsp sugar
    1 Tbsp Quick-rise yeast
    1 Tbsp cooking oil
    1 c warm (120*) water (hot right out of the tap works!)

    Combine dry ingredients. Combine oil & water and add to dry stuff. Mix and knead it for a couple minutes. (If you have a good mixer it will prolly do it for you!) Put in greased bowl, let rise 20 minutes(ish). Punch down and pat out into a cookie sheet till it fills the sheet up.

    1/4 c italian salad dressing (I think I use more... I just squirt it on till it looks right)
    1/4 tsp garlic power (see above comment)
    1/2 tsp oregano (ditto)
    1 c shredded mozzarella (ditto again)

    Brush dough with salad dressing, sprinkle with spices and cheese.

    450* for 12-15 min till golden brown.

    I use a pizza cutter to whack this into squares when it's done. And the original recipe had it being cooked on a pizza pan... I just use the cookie sheets 'cause thats what I have!

    I'm making it right now. I'm yelling the ingredients to my daughter and she's measuring them into a bowl. I'll go mix them when she's done. I really need to get more ink for my printer!

    Shoot! I'm out of mozzarella cheese. I thought I had another bag in the freezer. I'm going to try it with cheddar on one and parmesan on the other (I doubled the recipe)

    I made my own Italian dressing. I'll post the recipe later. I only have 10 more minutes till I have to pat it into the pans.

    It's better with mozz, but I've made it with cheddar and it's pretty good that way.

    Let me know how the parmesan turns out! That sounds good!

    The parmesan one is in the oven and the cheddar one is ready to go in. I have a pan of chicken in there, so I can only cook one at a time. I put mine on pizza screens. I have so many different pans it's practically obscene. I just have to have what I need and I cook a lot.

    Eating the parmesan one now. Good flavor, but the cheese was grated too small so it overcooked a bit. I like the crust and the Italian dressing gives it a really good flavor.

    The cheddar one is in the oven. I'll post again when I try it.

    I have the feeling we won't be eating the chicken tonight.

    Oh, my word! This is soooo good!!! I can't wait to try it with mozzarella! I might even break down and pay their price ($6 a lb, which is why I don't have any) this week.
