    Default Oatmeal Bread: A Cure for the Januaries

    I found this recipe while doing a search for Oatmeal Bread.
    The poster calls themselves The Homesick Texan and related a wonderful story with the recipe which was her Great Grandmothers recipe.
    The "Januaries" are when you are feeling low, not much energy, no desire to cook or do much of anything, and are in need of good old fashioned comfort food!
    I had forgotten how satisfying it is to make home-made bread from scratch until I pulled the first loaf from the oven. We didn't even wait for it to cool!
    I didn't have the thick cut oats on hand and used regular oatmeal and it worked great. Best part is NO kneading (unless you are really stressed and need to punch something).

    Great Grandma Gibson's Oatmeal Bread (makes 2 loaves)

    2 cups boiling milk
    1 cup of oats (not instant)
    2 teaspoons salt
    1 eg
    1/2 cup honey
    4 tablespoons shortning
    5-51/2 cups flour
    2 packets yeast
    1/2 cup warm water

    Add oatmeal to hot milk and let stand for two hours.
    Dissolve yeast in warm water.
    Mix yeast and other ingredients with the oatmeal, start with 5 cups flour and add more to make smooth dough.
    Shape into loaves and place in prepared pans or place on parchment lined baking sheet.
    Let rise until double (about an hour) and then bake at 350 degrees for 40-45 minutes.

    You can brush the loaves with milk and sprinkle oatmeal on the tops before baking to make prettier.

    Enjoy!!!! (This would be good with Limner's potato soup.)

    Wow what a great sounding bread and so easy to make. It looks like a great winner to me and I'll give it a go too. Thanks for sharing. AL
