Use skinless, boneless chicken breast.
Cook in small bite size pieces until done but be careful not to dry it out.
Cool it off in fridge for a bit. Put in a bowl and ....
Add several springs of fresh parsley cut fine
Add two scallions chopped fine
Add 8 oz. of creamed cheese with chives
Salt & Pepper
Mix well with the chicken

Roll Phyllo out thin. Put Tablespoons of chicken mixture in phyllo. Fold over and seal the edges.

Place on ungreased baking sheet and bake at 375 degrees F for 22 minutes. Perfect. Even better if you have leftover chicken gravy from a roasted chicken to top it off. This really is yummy. Give it a go. AL
