Disclaimer--I don't have much of a recipe... more like some scribbled notes on a scrap of paper that is my mom's official gumbo recipe. You have to fiddle with it, figure out how much you want to make. But that's the beauty of gumbo--you can't mess it up!

Saute an onion in butter. Add chicken broth, stewed tomatoes, sliced raw okra, minced garlic and meat. Add a finely chopped jalapeno if you want more "heat". Simmer and season with salt, pepper and parsley. Add rice if you want, or serve it over rice.

(*When I cook a chicken and debone it, I reserve some of the stock for gumbo and throw in some of the meat. If you have some sausage, that's a really tasty addition!)
