Pickled Garlic
6 cup peeled garlic cloves
Make syrup:
3 cups vinegar
1 tsp salt
1 cup sugar
Bring to a boil and hold at simmer while -
Blanche garlic for one minute in boiling water. Drain pack into hot pint jars. pour syrup to within 1/4" of top and put on lids. Water bath for 10 minutes.
This is really good and is great as a condiment for meat dishes. I usually open a jar and very very little if any left to put in fridge after a meal.
