    As a note...when I cook with browned ground beef I always sneak a couple tablespoons full and put them in a zippered bag in the freezer. Before long I have enough ground beef already browned for another meal when I've forgotten to take something out of the freezer or when I need something quick. A spoonful or so of this reserved ground beef mixed in store-bought canned vegetable soup makes it a bit more satisfying in the wintertime.

    I've also substituted ground beef for the usual beef cuts in Beef Stew and Beef & Noodles.


    A favorite meal at our house is Calico Beans.


    Calico Beans


    6 slices bacon

    1 lb ground meat

    1 med onion, chopped

    ½ c. catsup

    ½ c. brown sugar

    1 t. prepared mustard

    2 t. vinegar

    1 can baked beans

    1 can butter beans

    1 can kidney beans



    1. Cook bacon til crisp, crumble and set aside.

    2. Brown ground meat and onion using the bacon drippings.

    3. Combine all in a 3-quart casserole

    4. Bake at 350 degrees for 40 minutes.

    My favorite ground beef recipe.

    Onion-Mushroom Ground Beef

    Ingredients
    1½ pounds 10% fat ground beef
    1 – 10.25 oz can Campbell’s French Onion soup
    1 – 10.25 oz can Campbell’s Beefy Mushroom soup
    1 – 4 oz jar of slice mushrooms

    Preparation
    Brown the hamburger then pour half the contents of the canned soups and mushrooms into an oven safe casserole dish. Put in the ground beef and cover it with the rest of the soup and mushrooms items. Cover dish and cook in the oven at 350 degrees for an hour. Stir it well and serve it over rice.

    Notes:
    I buy it at Sam’s Club and love it. No grease whatsoever in the pan after browning the hamburger. I hate having to drain grease off after browning hamburger or sausage.

    Probable does not have to cook for an hour, but the original recipe called for using fresh uncooked ground beef. My wife and I did not like the way it turned out so the next time we browned the beef first. Much, much better that way.

    Default Porcupine Balls

    Here's one my kids loved to eat. I liked it too and it uses up some of that rice we all have stored lol.

    Porcupine Balls
    1 lb hamburger
    4 slices bread
    1 egg, beaten
    1 cup milk
    2 medium onions
    2 sticks celery, chopped
    1/4 cup uncooked rice
    1 tsp salt
    2 cups tomato juice

    Crumble bread and soak in milk. Add beaten egg. Mix with other ingredients except tomato juice. Shape into 8 balls and place in a greased casserole. Pour tomato juice over the balls and bake 1 1/2 hours in a 350 deg. oven. May be cooked in pressure cooker for 15 minutes.

    Wonderful Idea Sassy. You are so smart. Now, I will start doing that too. I have a recipe for a Mexican style dish ,but I am waaaay too tired to try and type it so anyone will understand it. It can be made with ground beef or just beans so I am not sure if it should go here or elsewhere. I have made this one up. Have made it three times now and we both love it. What a way to stretch the dollar which we all need right now and it is very, very yummy. If anyone has a special place you want me to put it up, please let me know. Right now my brain is too tired to think. AL

    I have so many ways that I use ground beef. I'll start with this one.

    Stuff (originally made as patties with gravy)

    brown ground beef w/ onions
    add 1 can of cream of mushroom soup
    add enough water to cook rice
    season with oregano, parsley, garlic powder,salt and pepper
    add rice and let it all cook together

    I have waterless cookware that will seal and cook the rice.
    This can also be made with the rice cooked separately. In which case do not put as much water in the soup.

    Here's another.

    Hamburger Stew

    brown ground beef
    add sliced onion
    add flour and make a gravy
    then season with beef base or boullion,
    celery seasoning(you can add chopped celery)
    salt and pepper
    add one can of carrots, drained
    add chunks of potatoes
    turn down the heat, put on a lid and cook until potatoes are done.
    We serve this with a side pot of cooked rice.

    Sloppy Joes

    2 lbs hamburger, browned, drained and set aside
    1 stalk celery, minced
    1 medium onion, minced
    1/2 sweet pepper, finely chopped
    Two 8 oz cans tomato sauce
    1/2 cup ketchup
    1/2 cup barbeque sauce (I use Bullseye)
    2 Tbsp brown sugar
    2 tsp (more or less, depending on taste) ground mustard
    2 Tbsp worcestershire sauce
    2 Tbsp Apple Cider vinegar
    Splash of olive oil

    Saute celery, onion and sweet pepper in olive oil over medium heat until limp. Add all other ingredients except cooked burger. Stir until well mixed. Simmer over low heat until thick, about 20 minutes. Add reserved cooked hamburger. Simmer an additional 5-10 minutes. Serve on buns with plenty of napkins.


    Taco Soup

    2 lbs hamburger, cooked, drained and reserved
    1 medium onion, chopped
    splash of olive oil
    2 cans diced tomatoes, with juice
    1 1/2 to 2 cups frozen corn, thawed (we like sweet white corn)
    2 1/2 cups beef broth or water
    1 pkg Ranch dressing mix
    1 pkg taco seasoning mix
    1 tsp ground cumin
    diced jalapenos, to taste

    In a soup pot,saute onion in olive oil until translucent. Add everything else and mix well. Cook at a slow boil for 20 minutes or so.

    Serve with grated cheese and sour cream on top if desired.

    Default Mexican Hamburger...or Bean Taco

    One lb. hamburger browned in a large skillet

    One large onion chopped fine. Put half into the skillet with the hamburger and set the other half aside

    Finely chop one jalapeno pepper and add to skillet mixture

    Chop fine a handful of cilantro and add to mixture

    Salt, pepper and a good dash of red pepper flakes

    Add one can of refried beans without the lard in them. Mush them into the mixture you are cooking.

    Now add the juice of one whole fresh Lime and Lemon works too

    Mix all that up well in your large pan, turn heat down now to low.

    Add: One Jar of Roasted Tomatillo Salsa to this whole mixture and stir in well. I use Santa Barbara Organic brand

    Add: About two cups of beef broth and stir well, now let it cook down without a lid on to let it thicken up.

    Now on the side you should have chopped fine:

    Two tomatoes
    1/2 of your chopped onion
    Avacado (or frozen quacamole thawed out)
    Sour cream
    More Chopped fresh cilantro
    More lemon for anyone who wants a squeeze

    Bake as many flour tortillas Dry on cookie sheet as you would like
    at 350 degrees until browned.

    When those are brown, put one each on a plate and top with your skillet mixture.

    Then top with your chopped mixture of veggies

    Topped off with avacado's tomatoes and onions and sour cream

    YUMMO. Have extra browned tortillas for using like a shovel or spoon.

    I hope you like this. You could add corn but I cannot eat it. Do as your family would like. Taste as you go along. You may want to add some onion powder, cumin, garlic as you cook. Enjoy please. AL

    **** ON THE SHINGLES
    Make gravy, fry ground beef
    mix gravy with ground beef
    Pour on sandwich bread .
    Pretty good .
