    I just canned up 34 pints of THIS soup Friday. I added a couple tablespoons of seasoned salt (for my 6x recipe size- figure 1 tsp or to taste for this recipe)

    It's a GOOD soup... not quite like Campbells, but hubby says "better".

    Campbell`s Bean & Bacon Soup

    Serves/Makes: 4 | Difficulty Level: 3 | Ready In: > 5 hrs

    Ingredients:

    2 cups navy beans -- soaked overnight
    6 strips crispy fried bacon -- minced
    3 medium carrots -- minced
    3 medium celery stalks -- minced
    1 medium onion -- minced
    1/2 teaspoon thyme
    2 cloves garlic -- minced
    4 ounces tomato paste
    1 dash red pepper flakes
    6 cups water, more if needed
    2 cups ham stock, if available -- decrease water
    1 tablespoon wine vinegar
    few drops liquid Barbecue Smoke� -- optional
    salt and pepper -- to taste




    Directions:
    Soak beans overnight and discard water. Place all ingredients except wine vinegar, salt and pepper in a large kettle. Simmer until beans are tender (about 3 hours) .(substituting 1 or 2 cups of ham stock for 1 or 2 cups of water gives this soup an extra depth of flavor)

    Puree 1 to 2 cups of soup and return to pot. Add wine vinegar and liquid smoke, mix well. Salt and pepper to taste. Serve with hot cornbread and honey.

    Bacon pieces added to a pot of beans is good. Or,
    Add potatoes and carrots. Or,
    Add diced carrots, catsup, bacon bits and a drop of liquid smoke. (Short version of Summertyme's recipe!) Or,
    Beans and green beans go well together.
    Use your imagination, but start with a small pot and see if you like it!!

    Canned ham works OK, fresh ham or bacon is better (you can freeze it). I think spam probably just fell apart, also I think they may be adding stuff these days. I'm not sure, but I know I did not like the flavor last time we bought it. Could just be more grown up taste buds, but I'm also guessing a few new flavorings or something.

    Summer, if that turns out anywhere near as good as your tomato soup did (which I canned 48 pints of this summer lol) then I will be making this and canning it up too. That's a favorite around this house with some cornbread sticks to go with!

    Awhile back I discovered some ham flavored bouillon cubes (Knorr brand if I remember correctly), and recently found jars of "Ham Base" at Cash and Carry.

    I've tried both and they help considerably to boost the flavor of bean soup.

    I've added packages of bacon bits to our preps, they keep a long time.

    I would do just fine with beans & peanut butter myself.

    ok, now you guys have me hungry for bean soup.

    i just wandered through the preps and grabbed a bag of black-eyed peas (why do they call them "peas", they're beans) and some ham soup base (powdered boullion). popped over to the freezer and grabbed a package of vacuum sealed ham slices from a Honey-Baked that we had a while back. i threw all that in a pot with some s&p, a little parsley, a clove of garlic, 1/2 an onion 1 stalk of celery and a shredded carrot.

    we'll see what happens......

    if it's that bad, i'll just boil it down and serve it over rice.

    AS for beans. Ya'all gotta get some country ham pieces to use. Or a good smoked ham shank after you ate the good stuff. And 100% on the onions
