Default Homemade mushroom and onion soup mix recipes

    Homemade Onion Soup Mix
    3/4 cup dried minced onion
1/3 cup beef flavored instant bouillon
    4 tsp. onion powder
    1/4 tsp. celery salt
    1/4 tsp. sugar
    1/8 tsp. white pepper
    PREPARATION:
Mix all ingredients together well. Stir before each use. Five tablespoons of the mix equals 1.25-oz. pkg. of purchased dry onion soup mix.

    Homemade mushroom soup mix

    2 cups powdered milk
    3/4 cups cornstarch
1/4 cups chicken, beef, or vegetable bouillon granules
2 tablespoons dried onion flakes or 1 teaspoon of onion powder
    1 t. garlic powder
    1 teaspoon dried thyme, crushed
1 teaspoon dried basil or marjoram, crushed
1/2 teaspoon black or white pepper
    1/2 c. dried mushrooms

Combine all ingredients and blend until mixed. Store in an airtight container in a cool dry place for up to 1 year. This recipe makes 3 cups and is enough for 9 cans of soup.

To substitute for one can of condensed cream soup:
In a 1-quart saucepan combine 1/3 cup of soup mix and 1 1/4 cup water or milk. Bring to a boil for 2 to 2 1/2 minutes, stirring occasionally.

This is great- I am always using one or the other in just about everything I make.

I use both of these recipes all the time. You, seriously, cannot tell the difference between these and the store bought versions. Saves lots of $ for me and very convenient to have premade in the pantry.

Thank you so much for posting these! I've made onion soup mix before but have never had a recipe for the mushroom soup.

Hi Saul, I was thinking the same thing. Also don't want any MSG. So, I checked a plastic container in my fridge.....It is called... Minor's Beef and I also have Chicken. No MSG but it isn't bullion. I wonder if they make a bullion?? It is used in restaraunts for making their gravies, etc. One 8 Oz. plastic tub lasts me about two years as you only need about a teaspoon for a whole big batch of soup. Anyone know of a bullion without MSG or Salt??? Thanks, AL

Thank you so much Micah. I use cream of mushie soup all the time in cooking, especially to cook a roast in. This will come in very handy so I printed it off and put it in my kitchen binder.

I use Herb Ox Chicken and Beef - No MSG
    http://www.hormelfoods.com/brands/herb-Ox/

Here's My "Cream of Something" Soup Mix
    2 1/4c non-fat dry milk powder
    3/4 c cornstarch
1/4 c Herb Ox chicken instant bouilon
1 tsp onion powder or 2 tbsp onion flakes
1 tsp garlic powder or 2 tbsp granulated garlic
    1 tsp dried basil
1 tsp dried thyme leaves (optional)
    1/2 tsp black pepper (optional)
2 tsp dried celery flakes (optional)

    Equals 9 cans of soup.

Note: To add mixture to a recipe, first mix with cold water. This prevents the cornstarch from clumping, when adding to a boiling water.

To make can of "whatever" soup. Cook: Combine 1/3 c mix and 1 1/4c cool water in a small sauce pan. If desired, add extra ingredient. See below. Stir well, bring to a boil over medium heat. Stir constantly for 1 full minute or until thickened. Remove from heat. Use in any recipe calling for can of cream of "something" soup. Microwave: reduce liquid to 1 cup.

Optional: Add 1 tbsp butter, oil, or bacon drippings, when cooking.

    Additional Ingredients: Puree or
    1/2 c finely chopped mushrooms
    1/2 c minced celery
    1 c diced cooked potatoes
    1 c chopped, cooked broccoli
    1 c chopped, cooked asparagus
    1/2 - 1 c chopped cooked chicken
    1/2 - 1 c chopped seeded tomato
    1/2 c sauteed onions
2-3 c finely chopped mushrooms, plus 1-2 roasted garlic cloves, stir well.

BTW, I sometimes use the base recipe, mixed with water when making brown gravy, along with a can of chicken stock. The combo has more flavor than just using chicken stock alone.

    Enjoy!
