Chocolate Muffins...no eggs, no oil...

These are incredible!!! It's like eating a muffin shaped brownie!

2 C white flour
2 C white sugar (I have used half splenda and it worked fine)
2/3 C cocoa
1 heaping tsp baking powder
1/2 tsp salt
2 tsp vanilla
1/2 c applesauce (the kind with cinnamon is good!)
1 C water

Mix the dry stuff in a med size bowl. Mix the wet stuff together and dump into the dry stuff. Mix until everything is combined...don't worry about a few lumps...
Scoop into muffin cups. 1/4 c icecream scoop works perfectly. Makes 12
Bake at 375 for around 20 minutes.

I will try these. I used to buy a delicious lowfat brownie at the grocery store that I can't get anymore. This might do the trick!
