Easy Mixed Fruit Cobbler

Crust

* 2 1/2 cups all-purpose flour, plus extra for rolling
* 1 cup unsalted butter, very-cold, cut into 1/2 inch cubes
* 1 teaspoon salt
* 1 teaspoon sugar
* 4 to 8 T ice water

Filling

* 1 cup of fresh or frozen blue berries
* 1 cup of fresh or frozen raspberries
* 1 cup of fresh or frozen black berries
* 1 cups fresh or frozen peaches
* 2 cups of sugar
* 1 stick butter cut up in cubes.
* 1 cup of heavy whipping cream.


Heat oven to 350

Combine flour, salt, and sugar in a food processor; pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add ice water 1 Tbsp at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready. If the dough doesn't hold together, add a little more water and pulse again.

Filling: In a baking dish 10x10 combine all your fruit. Add the butter on top and heavy whipping cream. Pour in the sugar, making sure it's spread/mixed evenly.

Crust: Prep an area for rolling out the crust- sprinkle some flour down & coat your rolling pin with it. Place the prepped pie crust on top of flour & roll it out until flattened at least enough to cover the pan of fruit. (10 x 10) After it's been rolled out carefully place the crust on top of the fruit, basically covering it like a blanket. After doing so place inside of the oven and bake for 40 minutes. Remove the cobbler from the oven. Let cool for at least 10 minutes before serving. Enjoy!

You can also take some melted butter & lightly coat the top of the crust & sprinkle some sugar on top.

Great topped with whipped cream or served with some icecream! :)
