    Default Summer Sausage

    Does someone have a suggestion to use summer sausage other than a snack with cheese and crackers? (venison mixed w/pork)

    You could use it in place of Kielbasa in Red Beans and Rice, also use instead of ground beef in pasta sauce.

    Also, sausage placed in beef stew is a nice change, though since DH does not like it, I have not done this for years.

    Other fun things you can do with almost any sausage are: serve with hot biscuits, wrap up in savory pancakes, use in place of ham in a quiche etc.

    You can even use them as part of the meat to flavor you chili.

    Almost forgot, slice think and use on home-made pizza.

    Someone gave us some big huge venison/pork sausages that my husband did not like. I finally peeled the paper off them and ground them up in my meat grinder when he wasn't around and used it in chili. He loved the chili and never knew it was in there.

    You can also fry it as a breakfast sausage.

    Default How about using summer sausage as...

    Crab bait, instead of human food? (And, never spend any money to buy it.) The satfat content is so high, it dominates it nutritionally. I don't eat the stuff BC of that.
