I make mine without the egg, I use dill pickle juice (kids don't like the pickles in it) instead of sweet (and I add garlic salt. (I can't say how much, because I like garlic and never measure it) For that matter, I don't measure any of it. I do it by look and taste.
Ketchup
Mayo
Dill pickle juice
Garlic Salt
Worcestershire sauce
guess it's not really Thousand Island, eh? LOL, but it's the version I like.
I use mirical whip, ketchup, and diced sweet gerkins with some juice. Have to try worcestershire sauce next time. No egg; never thought of it.
Any body know of a current brand of worcestershire sauce that tasts like Lea & Perrins used to taste 12 years ago. They say they have not changed the formula but the ingredients are listed in slightly different order. Tastes no better that anybody elses now. Thanks to preps I know it is different because I went from a three year old bottle to a new one when I noticed the taste difference.
Nessie and Bigfoot 2016. Change you can believe in.
some tasty additions:
celery salt
garlic powder
onion powder
Did you know that if you put your mayo in the bowl and whisk the heck out of it, then add the rest of the ingredients, it will be smooth and the other ingredients will blend in much easier. This works for any recipe using mayo.
Pigzzilla
Mayonnaise
1 egg or two yolks
1 Tbsp vinegar or lemon juice
1/4 tsp mustard powder
8 oz oil
Put the first three in a blender and blend for one full minute. Add the oil a drop at a time. When the mixture thickens, stop the blender and scrape the sides. You may add the oil at a slow drizzle now, still very slowly. As the mixture thickens it forms a bubble and stops blending, so you will have to scrape the sides more frequently.
Don't get in a hurry. This recipe will fail if you don't blend one full minute before adding oil, or if you add oil too fast.
Using white vinegar and safflower oil makes a mayo that tastes exactly like store bought but fresher and sweeter. You can try other types of oil and vinegar to vary the flavor. Try mint, cherry, or other flavor instead of mustard.
BTW, I'm trying to hold costs down: I only eat Hundred Island Dressing!
