Awesome site! Click on Rice for tons of rice recipes, too. Who says preps have to be boring?

Just had DH's favorite beans with dinner tonight - got this from a lady from the Southwest.

Soak and/or boil pinto beans until almost soft
Add a piece of bacon or some chunks of ham (or even a hambone)
    1 tsp salt.

    Simmer for several hours.

That's it, simple sometimes really is better. The 1tsp salt seems pretty constant for most pots of beans, though I have added less for very small pots and up to 1 1/2 tsp for a very large pot.

If used for refried beans, be sure to add some of the "pot licker" to keep them from drying out.

This recipe for red beans and rice was excellent. DH burgers weren't too bad either (with my homemade ketsup). Used the leftovers next day and mixed it with fried hamburger, my homemade taco seasoning. Stuffed it in tortilla shells with homemade salsa, cheddar cheese and sour cream. Really good.
