Natty...you know that you can only make rennet from the stomach of a BABY ruminant which has never eaten anything but milk, right?
I should consider trying it with the baby (generally 1-2 days, but I'd have to let them eat and grow for about 5 days, I think) bull calves I butcher for dog food.
But I've got a year's supply- at least- of powdered rennet in the freezer, so I haven't tried it yet.

this is vegan rennet. i have to use this because of allergies. i think it fermented from mushrooms and it is concentrated so it goes a long way. it is pretty cheap, and most coops have it and you can order it online

Hey Summer...from what I understand, goats have 3 stomachs. One is strictly for milk consumption and only operates when their head is UP (as in, nursing position). When they start eating solids along with the milk, the solids go in the 2nd stomach because their head is DOWN. I could be wrong about this, but if it's true, then as long as it's a kid that's still nursing, and you use the "milk stomach," it would be okay, wouldn't it?

this another site I go to, he uses junket tablets only, also shows how to make ginger ale, and other recipes, he also has great pics of cheese making, when and how to cut the curd, etc, I found it very helpful and just made my first hard cheeses, cheddar and it came out surprizingly well...
