Default Peaches, Peaches and More Peaches. need help

We have 5 mature peach trees of peaches and they starting to all ripen.

I plan on making some peach wine and I will can some, any other ideas.

We are not jam or peach butter folks.

Please keep in mind I will be the only one doing the work.

I can refrigerate for a few days but after that I have to do something with what we have. I will be giving away some at work but would like to try to put away as much as I can.

just can them. as in cut in sections or halves and canned


you could dry some, make syrup, freeze some

Dehydrate some, even if only for the smell coming off the dehydrator.

I'm convinced that Heaven smells like peaches in the dehydrator.

Kate, you can always put a U-Pick-em sign and sell some, or you can take some in to a Farmers Market and sell some... or you can just pack some of the jars, wine bottles in a box and send em to me.

I can up peach pie filling most years. It's SO nice to be able to make a pie in 5 minutes (about all I have most nights!). I actually give canned pie filling and frozen pie crusts (rolled out, and frozen on "pizza cardboard") for Christmas presents... it lets the "non bakers" in the family put together a "homemade" pie in 5 minutes... you have NO idea how popular it is!!

It's best to use ClearJel for the thickener in the canned pie filling... you can use cornstarch, but it doesn't work as well.

We made a bunch of peach sauce (the applesauce equivalent) last year. Let me tell you, on a hot day, a bowl of cold peach sauce with a little cinnamon sprinkled on top is about as refreshing as it gets.

Yum, I say just make more wine - it's not like it'll go bad!

p.s. feeling envious - we've got two trees that had probably hundreds of peaches, and they all dropped when they were quarter-sized this spring.

Thanks everyone, I just went to go pick a slew of peaches and came back disgusted.

My DH said they were all ready to go, I found maybe 12 decent ones. The others are a) shriveled up b) hard as a rock but pretty in color or c) the ones that are ripe are bug infested.

So, I guess I will check everyday and get the ones as they just start to soften to at least consume. We have peach orchards for miles around us but I hate to have to go buy some.

We just do not like using pesticides and guess that is why we have what we have. Last year not the problem.

My garden this year is awful the tomatoes are slow and few vs. a bonanza last year. I was hoping to can up some tomatoes but again, not much to be had and they are just now getting big.

I will keep the suggestions for next year.

or dehydrate- you can cut them into little bits and add them to oatmeal, granola, coffee cakes, etc.

I use my frozen peaches often to make pancake or waffle syrup, much cheaper than maple syrup for all the kids. Just put it on the stove, chop at it a bit with a wooden spoon, and bring to a boil on the stove to thicken. Really good with vanilla yogurt too, esp. on pancakes (peaches n cream!)
